Bij batch-kookprocessen wordt gebruikgemaakt van de Tanis Thermosyphon Cooker en de Batch Aerator, terwijl bij continu-kookprocessen een Coil- of Film Cooker met een Continuous Aerator wordt gebruikt. Beide methoden omvatten een dynamische menger voor het toevoegen van de ingredi\u00ebnten na het koken, een koeltrommel en een koeltafel, om de snoepmassa de juiste stevigheid te geven voor de vormlijn.<\/p>\n<p><strong>Hoe doen we dat?<\/strong> Het productieproces van chewy candy begint met het voormengen van ingredi\u00ebnten zoals suiker en glucosestroop, gevolgd door koken op hoge temperaturen om de juiste consistentie te bereiken. Er zijn verschillende opties om de geleermiddelen en de vetfase aan het proces toe te voegen. Na het koken wordt het mengsel belucht, hetzij continu, hetzij in batches, om de gewenste chewy textuur te cre\u00ebren. Het snoep wordt vervolgens gekoeld om de structuur te stabiliseren en voortijdige kristallisatie te voorkomen.
